118Milk powder can be prepared using spray drying or drum drying of milk. The spray dried milk powder retains better physical and nutritional qualities. The hygiene during the manufacturing process is very important to avoid any unintentional contamination and growth of microorganism. Moisture content is an important parameter and should be kept very low to avoid any microbial or enzymatic deterioration. The recent trends in powders include instant milk powders. The industries have become more sophisticated and automated. In spray drying process, single particle drying is getting attention of researchers and industrialists. Also, Industries are keeping drying chamber externally in open air. It saves building cost as well as avoid explosion.
