Antioxidants,.natural.substances.that.exist.as.vitamins,.minerals,.and.other.compounds.in.foods,. are.classified.into.hydrophilic.and.hydrophobic..Water-soluble.antioxidants.react.with.oxidants.in. the.cell.cytoplasm.and.the.blood/plasma..Lipid-soluble.antioxidants.protect.cell.membranes.from. lipid. peroxidation. and. free. radicals.. The. antioxidant. defense. of. some. of. the. compounds. are. by. chelating. transition.metals. such. as. selenium.and. zinc. and. enhancing. the. activity.of. antioxidant.
