ABSTRACT

Applications of biosensors increased signi‘cantly in parallel with the development of the microprocessor-applied technology and rapid growth of biotechnology. These applications vary in different areas such as medical, food, environmental, military, and so forth. Considering food technology in particular, the biological and chemical contaminants should be determined, for they are of crucial importance for food safety and quality. Conventional methods applied for the determination of these components have some drawbacks when compared with biosensors. These procedures involve a series of time-consuming steps and bulky devices including separative techniques coupled to various detectors such as gas chromatography (GC), highperformance liquid chromatography (HPLC), mass spectrometer (MS), ultraviolet
