ABSTRACT

After this long journey, everything seems to be fitting into place. Never before have we been so easily able to follow our ancestral instincts for eating a healthy varied diet and taking pleasure from food, as nutritious food has become much more accessible to most people. But our planet, its population, and people’s lifestyles have changed, which will necessarily have an impact on how we produce and eat our food. In order to evolve into Homo gastronomicus we must know what we eat, enjoy it, avoid excess, choose foods from a variety of sources, and exercise. Otherwise we risk becoming gastronators-mindless consumers of empty structures.
