ABSTRACT

As shown in Figure 6.2, 3-MCPD can be formed by several food ingredients and additives under certain circumstances. While it is mostly found in abundance in acid-HVPs, its existence has been revealed in some conventional foods such as bread, meat, and beer. The formation of 3-MCPD requires one donor for its carbon backbone and another one for chlorine. Table 6.1 summarizes some common food systems that contain potential precursors for 3-MCPD. The following sections will discuss the major mechanism of 3-MCPD formation in food products, as well as its occurrence in different food systems.
