ABSTRACT

Take off the fire and add 7 ozs. of warm melted butter. Stir the whole well to get a firm cream. If too firm, add a few drops of warm water. Next add a spoonful of tomato sauce. Pass the whole through a very fine muslin. Again well mix, and finish by seasoning with paprika or cayenne pepper, salt, juice of one lemon, finely chopped tarragon and parsley.
