ABSTRACT
Börek constitutes one of the most significant parts of traditional Turkish cuisine. It is also, in fact, one of its most ancient elements, having been developed by the Turks of Central Asia before their westward migration to Anatolia. Although concoctions vaguely similar to börek can be found in other cuisines, the böreks of Turkey are unique because of the care and imagination that have gone into developing them in such great variety.
