ABSTRACT

As pointed out by Barrett (2010) the third pillar of food security, food utilisation, is concerned with the extent to which individuals and households are able to make good use of the food that they can command. This means that households are consuming foods that are nutritionally essential and these foods have been prepared safely and appropriately under sanitary conditions to deliver their full nutritional value. It also means that those consuming the food are sufficiently healthy that they can absorb and metabolise the nutrients that they need.
