ABSTRACT

Most of the guidelines and recommendations contained in this chapter were taken from the American Public Health Association (APHA), as described in the Chapters 7 and 13 of the 4th Edition of the Compendium of Methods for the Microbiological Examination of Foods (Morton, 2001, Cousin et al., 2001). When different from or complementary to those of the Compendium, they were complemented with information and recommendations from the 17th Edition of Standard Methods for the Examination of Dairy Products (Wehr and Frank, 2004) and the 21st Edition of the Standard Methods for the Examination of Water & Wastewater (Eaton et al., 2005).
