ABSTRACT

Most of the recommendations and guidelines contained in this chapter are taken from the American Public Health Association (APHA), as described in the 4th Edition of the Compendium of Methods for the Microbiological Examination of Foods (Downes & Ito, 2001). When different from or complementary to those of the Compendium, they were complemented with information and recommendations from the 21st Edition of the Standard Methods for the Examination of Water and Wastewater (Eaton et al., 2005), specific to the analysis of water, the 17th Edition of the Standard Methods for the Examination of Dairy Products (Wehr & Frank, 2004), specific to the microbiological examination of dairy products and the standards of the International Organization for Standardization (ISO 6887-4:2003/ Cor.1:2004, ISO 7218:2007), recommended for performing tests using ISO methods.
