ABSTRACT
In the past few years, there has been increasing interest in the biological effects of saffron and its potential medical applications (see Table 10.1). The scientific literature on this aspect of saffron was the subject of a review which appeared several years ago (Abdullaev 1993). Accordingly, this chapter will focus on recent developments in the field, within the context of the body of previous knowledge.
