ABSTRACT

Food preparation may be done on the premises or by outside caterers. Where caterers are used, a food reception area and regeneration equipment will be required. Catering kitchens are normally designed and installed by specialists. The broad requirements are:

Location

• Good access for delivery vehicles and refuse collection. • Kitchen service yard non-obvious to visitors (although it is of interest to residents). • Convenient food delivery route to dining areas. • Separate kitchen and food delivery route from laundry and soiled linen route (to prevent cross-infection;

other methods may be acceptable if the routes merge). • Access to toilet for exclusive use of kitchen staff.
