ABSTRACT

To cut through this morass of semantics, I will offer a definition of quality as it applies to the subject of this handbook — the soft drink product. A quality beverage is one that meets the standards of performance expected by both the manufacturer and the consumer. To perform well, the beverage must meet the following basic quality standards:

• The beverage must have the sensory properties that satisfy the consumer’s expectations. • It must present no health hazard to the public, in general, and to the consumer, in

particular. • The beverage must retain its initially produced quality for the prescribed shelf life in the

marketplace. • The product must meet the description offered on its label and in media advertising. • The full range of a company’s beverage products must reflect a positive image of the

company. • The cost of the beverage to the purchaser must be reasonable.
