ABSTRACT

The mung bean (Phaseolus aureus, Phaseolus mungo, Vigna radiata) is a large-seeded legume that is a native crop of southern Asia and is an important source of dietary protein for people in tropical and subtropical countries. In Asia, the mung bean is used as a supplemental protein source for the rice diet (Asian Vegetable Research and Development Center, 1976) while in the United States, the mung bean is produced primarily as a source of bean sprouts used in oriental cuisine.
