ABSTRACT
Mustard was one of the first crops domesticated by man. It is used mainly as a condiment but some is extracted to yield mustard oil and a residue (meal) that is rich in protein. Mustard oil is used either as a food oil or in certain industrial applications while the meal has potential for use as a protein supplement in animal feeding or with further refinement, as human food.
