The amount of money spent for a home winery can vary from practically nothing to thousands of dollars. The quality of wine may not increase in proportion to the amount of money spent. The main goals that should be attained are cleanliness, good practices and proper physical conditions. The type of refrigeration required for fermenting white wines depends on the tanks. The fermenting room and cellar should be clean. After each day's crushing and pressing, all the equipment should be thoroughly cleaned. Bottling equipment, hoses, filters, pumps and other items used to handle the wines during storage, racking and stabilization should be sterilized. Bottled wine can be binned. This form of storage is an efficient use of space. The disadvantage is that only the top row can be easily used. A small space with a sink, electricity and gas facilities should be set aside for the laboratory and tasting area. This should be a sheltered area.
