ABSTRACT

According to our convention made in Chapter 3, for the purposes of subject division of this book, we consider as liquids these materials which are able to flow under gravity. In Chapter 4 we discussed two cases of transport phenomena often met in food and bioprocessing, i.e., in non-Newtonian pipe flow and in agitated systems. In this chapter some models easily transferred from the theory to the practice, for use with processing equipment and unit operations, are summarized.
