ABSTRACT

There is a distance between transport phenomena modeling and application in the design of food or bioprocessing unit operations. The term transport phenomena fundamentals implies a more or less exact science. Usually, to a given problem, one solution exists. On the other hand, design of unit operations in which transport phenomena are involved is an inexact art, with usually many possible solutions to a given problem.
