ABSTRACT

The uses of amyl acetate include: as a flavoring for mineral waters and syrups; as an industrial solvent; and as an aerosol additive. Amyl acetate also occurs naturally in bananas, pears, yeast, baked potatoes, fried bacon, and in the honey bee’s natural alarm system. It is generally available as a mixture of isomers, principally iso-amyl acetate (3-methylbutyl acetate), n-amyl acetate and sec-amyl acetate (2-methylbutyl acetate).
