ABSTRACT

Packaging of poultry products is done for both aesthetic and utilitarian purposes. Utilitarian functions derived from packaging are assemblage of a number of small units into one larger easier to handle unit protection from physical damage, dehydration, oxygen, and other gases and protection from odors, microorganisms, dirt, filth, insects, and other contaminants. Considerable controversy still exists regarding the value of marketing fresh or frozen poultry. Proponents of merchandising frozen broilers argue that frozen broilers have a longer shelf-life, equilibrating supply and demand is easier, and freezing would create no problem for the consumer since many already freeze broilers at home. Frozen food products manufactured from poultry meat are cartoned in waxed cardboard boxes and then overwrapped and heat sealed either with waxed paper or cellophane. Aluminum containers have found widespread use for packaging precooked frozen foods. According to D. K. Tressler aluminum foil is highly resistant to many corrosive chemicals found in foods and is nontoxic.
