ABSTRACT

Technology reflects the relationship between the object, the means and the labor in a process, as well as the individual unit operations in the production process. During the development of a technology into an independent branch of science, a further categorization takes place. Process technology deals mainly with aspects of raw material conversion that is the inner structure and state of materials. Manufacturing technology deals with the change of raw materials in regard to form, shape and localization. During the development of dairy technology, the following classical milk product groups and technologies have been developed: market milk, acidified milk products, butter, cheese and long-shelf-life products, which characterize milk processing. With the increasing variety of milk products, as well as the innovations in machinery and plant design, the basic technologies for dairy processing are being constantly modified. The implementation of dairy technology occurs in dairies and milk processing plants.
