ABSTRACT

This chapter introduces the mathematical modeling and optimization technique in a process system. Mathematical modeling is based on the assumption that the relationship between the variables and the food quality indices in a food production process can be described in terms of a mathematical equation. The saturated fractional factorial design is frequently used statistical variable screening approach. It allows a food product developer to test only a fraction of the factor combinations in a full factorial design and still be able to obtain the most important system information. MODDE is an extensive program specialized for experimental design and data analysis. It contains almost all necessary functions related to product and process optimization in terms of statistical experimental design. In food product development the term prediction has two meanings: to calculate the response values according to certain levels of independent variables and to calculate the possible independent variable levels with a given response value.
