ABSTRACT

An expert system is actually a computer program capable of reasoning and making decisions like a human expert. It is possible to emulate the search behavior of human experts in solving a problem within a special domain of expertise. Expert systems show a new perspective on information processing, in which the computer serves not only for storage of information or as a calculator but also as an intelligent helper in solving problems such as decision making, process control, and product optimization. With the rapid development of modern computer techniques, the expert system is applied to applications in the field of food product development, food production process control, and automation. Having the foresight of exploring and applying expert systems in food product development and production can enhance the chances of successes. Both the fuzzy logic and the neural network are useful and important techniques in the building of a modern expert system in the field of food product design.
