ABSTRACT

This chapter offers food engineering and/or food science students an understanding of the engineering principles and hands-on experiences involved in the processing of food products. It deals with fundamental engineering aspects related to specific laboratory exercises, how to get ready for an experiment, and how to report it. The safety of all persons involved is of utmost importance in laboratory exercises, which means that everyone must have knowledge of basic safety principles, work alertly, and support one another in safe laboratory practices. Most equipment and instruments are supplied with operation manuals that define proper operating practices and calibration procedures. The most laboratory exercises are team efforts, students must be willing and able to work collaboratively. A laboratory report is used to communicate experimental findings to others who have interest in the results of the completed tests. Two common report formats used for different target audiences: an informal laboratory report and a formal laboratory report.
