ABSTRACT

Over the past two decades consumers, health nutrition professionals, and the media have received extensive education about the importance of increasing complex carbohydrates in one’s diet. Research linking the consumption of complex carbohydrates and the reduced risk of chronic disease (including cardiovascular diseases and cancers) has been passed on to consumers. Nevertheless, the government has yet to establish regulations that would quantify complex carbohydrates on food packaging labels and help consumers to make educated choices at the supermarket.
