ABSTRACT

In the United States, two federal agencies have the responsibility to en0sure that the canned vegetables in the market are safe and do not pose any economic fraud. The U.S. Food and Drug Administration (FDA) issues regulations to achieve both goals. The U.S. Department of Agriculture (USDA) issues voluntary guidelines, which, in addition to achieving the same goals, are aimed at facilitating commerce. The information in this chapter has been modified from such regulations and guidelines.
