ABSTRACT

It is generally accepted that the Chinese invented soy sauce. Over the years, overseas Chinese introduced soy sauce to the different parts of the world. Later, the Kikkoman Company of Japan promoted soy sauce in various countries. For example, in the United States, the Kikkoman Company was the first major foreign company to build a largescale processing plant to manufacture soy sauce. Now, its products are in almost every supermarket or grocery store in this country. Depending on the raw materials used and manufacturing method applied, there are many different kinds of soy sauce, and they differ in flavor.
