ABSTRACT

The Food and Drug Administration drug-approval process is only the start or assuring the safety of food-animal products. The effectiveness of these residue control measures is then monitored by the USDA-Food Safety and Inspection Service (FSIS). The USDA's Food Safety and Inspection Service have the largest health inspection force in the Federal government—more than 8,000 inspectors in 7,200 meat and poultry plants. One of the key elements that make American agriculture the most dynamic food-producing machine in the world is the effective and efficient use of chemicals to nourish, enhance growth, and control pests of crops and livestock. Independent of whether producers consider the concern to be legitimate, it's in their best interest and the image of the livestock industry for them to be sympathetic to the views of the people toward residues. Inspection begins at slaughter when veterinarians assess the health status of livestock and poultry.
