the by-product, and knowledge of commercial potential in terms of consumer demand. It is very important that the technology for valorization of the food processing by-products is available so that the by-products are appropriately subjected to the value addition process and adequately utilized. Further, even if some knowledge is available about the possible valorization of certain by-products of an industry, the success of the same is limited owing to the fact that the production process is yet to be standardized on the industrial production scale and most of the information available is restricted to the laboratory scale and/or pilot scale only. In fact, very few industries have adopted valorization of by-products and have tasted success in their attempts. Several examples have been presented in the respective chapters that dealt with specific food industries.
