The various cole crops differ significantly in their post-harvest characteristics, reflecting intrinsic differences in structure and physiological function of the edible part (7). The fresh young leaves of kale have a very high respiration rate and, with their large surface area, are prone to wilting. Vacuum cooling or hydro-cooling is appropriate, and maximum storage life is about 3 weeks. Plastic film packaging helps to maintain quality during the brief marketing period.
