Mycotoxin bioactives occurs in raw and dried fruits, cereals, and nut products pre-and postharvest stage. Cereals are the most studied products regarding this toxin detection, but fruits and fruit-based processed products may also represent a potential source of risk with species belonging to the Aspergillus and Penicillium genera worldwide (Battilani et al. 2008; Figure 13.1).
