ABSTRACT

With recent advancements in the field of optics, new and innovative sensing technologies have emerged. In some instances, these technologies are prov­ ing to be effective as rapid response biosensing tools and, in practice, may prove to be valuable for food safety and inspection. As biosensors, the optical technologies are capable of detecting biological contaminants in­ cluding foodborne pathogens at concentration levels below those achiev­ able with current ELISA methods. Equally important, sample preparation and chemistry may be dramatically simplified. In this paper, emerging optical biosensor technologies are reviewed and their potential applicability evaluated.
