ABSTRACT

Biosurfactants are released by living cells, in the majority of cases microorganisms, and characteristically have a hydrophobic and a hydrophilic moiety within the same molecule. This amphiphatic character imparts special properties including adsorption at interfaces, most notably the air-water interface. Surface activity is most often associated with the ability of a biosurfactant to reduce the surface tension of water.
