ABSTRACT

Of the five senses, sight is one of the most developed and im portant to hu ­ mans. We use our ability to see in almost every aspect of our daily lives, and it continually provides us with inform ation about our environment. Color adds a further dimension that gives us additional data as well as frequently adding to our pleasure and enjoyment. It is, therefore, not surprising that from early times food has been prepared to be more visually appealing by the use of colorful ingredients.
