ABSTRACT

Food safety is primarily concerned with microbial food poisoning (see Chapter 13) and the pres­ ence of certain chemicals in food. The chemicals may either be present in foods as natural com­ pounds or introduced to them through industrial accidents, food additives, pesticides, environ­ mental pollutants, or even intentional fraud. All these sources require a different concept of food safety and a different approach to protect consumers from hazards (1).
