ABSTRACT

Cumin, since the ancient days, has been used by the people of Egypt and India as the main spice for different kinds of dishes, the chief reason being its unique aroma and exceptional taste. Nowadays people prefer to use natural products rather than chemicals and artificial flavors. Cumin is used mainly where highly spiced food is preferred. It is an ingredient of most curry powders, and many savory spice mixtures (1, 15,16,18). Cumin is also a medicinal plant and in many pharmacopoeias it is introduced as a medicinal herb because of its antibacterial, stomachic, diuretic, carminative, stimulant and antispasmodic properties. In the same manner, cumin can be used in the cosmetic industry (14,16, 18).
