ABSTRACT

Polyunsaturated fatty acids (PUFAs) contain multiple double bonds in the backbone structures, which might be crucial for their biological actions. PUFAs include omega-3 (n-3) and omega-6 (n-6) essential fatty acids that contain the rst double bond localized at the third and the sixth carbon from the omega end, respectively. The n-3 and n-6 “essential” fatty acids are required for biological processes, but not spontaneously synthesized in the body (Das, 2006). Thus, the n-3 and n-6 fatty acids must be provided by exogenous sources, principally daily diet.
