ABSTRACT

It is possible to measure changes in the properties of water in living systems that correlate with physiologicalfunctions.Changesindynamicpropertiesofwateratdifferenthydrationlevelsindicatetheexistenceofdifferentfractionsofwater,whichmayvaryinstructureandpropertyand presumablyplaydifferentbiologicalroles(Sun,2002).Studieshaveidentiedtheexistenceofat leastfourorvefractionsofwater,presumablyrelatingtodifferentinteractionsbetweenwaterand cellular constituents (Pissis et al., 1996; Ratkovic, 1987; Sun, 2000; Vertucci, 1990).
