Detection and identi„cation of bacterial pathogens in food using biochemical and immunological assays

This chapter describes biochemical and immunological assays for the detection and identication of foodborne pathogens and considerations that might be addressed during the development of improvements to these methods. The beginning of this chapter describes approaches for the enrichment of food samples that are essential for the amplication of bacteria before detection and identication using biochemical and immunological assays that are described in further parts of the chapter.
