A. Introduction The study of the rheology, equilibrium and exchange kinetics, and assembly of macromolecules and surfactants at soft and immiscible fluid interfaces are of significant interest for both scientific and technological applications. Foams and emulsions are of particular concern with regards to the non-equilibrium properties that arise, as discussed in [1-3]. Most practical systems are based on multi-component adsorption layers. Reported investigations include adsorption kinetics from mixed solutions [4], penetration of one species into an established adsorbed layer [5], and viscoelastic phenomena in well-defined interfacial nanomembranes.
