Selection of Dryers Many factors have to be considered before the ‡nal selection of the most suitable type of dryer for a given application. Such a selection is further complicated by the availability of a large variety of dryers. Commercial dryers are usually not Žexible enough to compensate for design inaccuracies or for problems associated with the handling of dierent types of food materials that have not been previously considered. For this reason, it is particularly important that all pertinent points be considered and that drying tests be conducted prior to the ‡nal selection of a dryer for a given problem. †e following procedure is recommended for the selection of the most suitable dryer to produce the desirable product, economically.
