ABSTRACT
Phospholipids contain both a hydrophilic headgroup and a hydrophobic tail. In water, these molecules typically form closed spheres (liposomes or vesicles) of bilayer membranes in order to expose all polar headgroups to the water phase and exclude all hydrophobic carbohydrate chains from contacting water.
