ABSTRACT

Different food preparation and consumption have arisen due to the geographic, social, and economic separation among societies, and those patterns comprise food cultures when adaptation to surrounding environmental conditions has been successful. Food culture is considered central part of human’s life. Ancient people cooked with the ingredients that could be gathered or raised in their own region in accordance with their cultures. The traditional Oriental vegetarian food culture has descended from Eastern philosophy and ancient Asian thought. Buddhism, Hinduism, and Taoism are representative of traditional Eastern philosophy and religion. Traditionally, the majority have not allowed the use of animal products as food ingredients due to the ideology of ahimsa that prohibits the taking of life. Accordingly, various vegetal diet cultures were developed with a foundation in religious ritual activity.
