ABSTRACT

Salmonellosis is caused by bacteria of the genus Salmonella and is one of the most widespread and dangerous foodborne diseases in the United States. The genus was named after Daniel Salmon, an American veterinary surgeon and bacteriologist who rst isolated the bacteria in 1885. These bacteria are rod shaped and Gram negative (Figure 9.1). Most Salmonella species are capable of movement and can survive either with or without oxygen.
