ABSTRACT

Livestock and resulting products are an important food source for the majority of the 7.5 billion people on earth. However, the disposal of associated wastes generated during the course of livestock production represents a potential economic and environmental liability. In general, carcasses and slaughter wastes are the primary constituents of carrion waste from livestock farming and subsequent meat processing (Arvanitoyannis and Ladas 2008; CAST 2009). The carrion arising from livestock production can consist of the entire carcass or portions of the carcass that have been deemed unsuitable for human consumption.
