ABSTRACT

In a porous food matrix, Fick’s law has been used extensively to model diffusion of uids. This law states that velocity of uid diffusing through the matrix is directly proportional to the concentration gradient. Fick’s second law can be written as

∂ ∂ = ∇ C t

D C2

where C is the concentration of uid, D is the coefcient of diffusivity, and t is time.
