ABSTRACT
Date is an important commercial crop grown in various parts of the world. The date fruits are relished for their sweet, succulent, and exotic ¨avor. The fruits are processed into a wide variety of products. Processed products produced from dates include dry dates, date bars, date syrup, date juice concentrate, date jam, date butter, date candy, date chutney, date relish, date pickles, date wine, and so on. Date oil and date coffee are some of the by-products produced from date seeds. This chapter describes the processing, composition, and quality characteristics of various products produced from dates.
