ABSTRACT

Fish products are a source of nutrients of high biological value. However, waste from their production and processing represents an important economic value and an environmental problem difcult to manage. Biotechnological processes are currently applied for example to improve the production of active compounds. However, sometimes the biotechnology applied to these products is lagging behind compared to other commodities, because scientic research and efforts have been much focused to preserve and nd out some uses of by-products, in an attempt to valorize them while minimizing economic losses. In this sense, this chapter reviews from a general perspective the integral utilization of shery products.
