ABSTRACT

Large amounts of by-products are constantly generated during the processing of coffee beans. Such by-products are generated in different stages, including the processing of the beans (by wet or dry process), their roasting and brewing, and basically comprise the husks, pulp, parchment, silverskin, and spent grounds. Owing to the generation in large amounts, it is of great interest for the coffee industry to nd alternatives for their valorization due to both economical and environmental reasons, since they present a toxic character when disposed directly in the environment, and also because the management of industrial residues and by-products promotes the sustainable development of a country’s economy.
