ABSTRACT
The word lipid is derived from the Greek lipos meaning fat. The lipids are products of biological origin, consisting of groups of fatty acids (FAs)—carboxylic acids with long unbranched chains, formed by an even number of carbon atoms connected by simple or double bonds. They can be found in various forms, as described in Table 4.1.
